GNU Screen makes a fine console server, allowing you to interact with your devices and keep logs of output to catch kernel panics.
Put this in your .screenrc:
screen /dev/ttyUSB0 9600 screen /dev/ttyUSB1 9600
And this in your crontab:
@reboot screen -d -m -L
